Diva Rice Sushi Rolls
Diva Rice Sushi Rolls

Ingredients
- 2 cups Diva Rice
- Nori sheets
- 1 cucumber, sliced into long, thin 2-inch strips (optional to add avocado too)
- 1 tsp Mirin or vinegar
- 1 cup Smoked salmon or canned tuna, minced
- 1/2 cup Mayonnaise
- Salt & pepper to taste
- Paprika & sesame seeds (optional)
- Bamboo mat for rolling
Instructions
- Prepare Diva Rice with hot water and let cool for 10-15 minutes. For best results: refrigerate for 12 hours to really bring the stickiness out. Add 1 tsp of Mirin or vinegar
- Mix minced smoked salmon or tuna with mayonnaise, paprika salt and pepper
- Place nori sheet on bamboo mat (shiny side down)
- Using your hands, mix Diva Rice with 1 tbsp rice wine vinegar (white wine vinegar or white vinegar are fine too)
- Spread a thin, even layer of rice, leaving a 1-inch strip bare at the top edge
- Arrange fillings in a horizontal line:
- Start with tuna/salmon mix
- Add cucumber strips
- Place avocado strips (optional)
- Using the mat, roll tightly from the bottom
- Wet the bare nori edge with water to seal
- Let rest for 2-3 minutes
- Slice roll into 6-8 pieces using a very sharp, wet knife
- Serve with soy sauce and wasabi
