Ingredients
- 3 servings Diva Rice
- 4 slices spam
- 1 egg
- 1 small onion, diced
- 1/4 cup frozen mixed vegetables
- 2 scallion or green onions, chopped
- 2 tbsp soy sauce
- Optional: Garlic, sesame oil
Instructions
- Prepare Diva Rice with hot water
- Cut SPAM into 0.5-inch cubes and cook in a pan for 8-10 minutes in medium heat, until crisp. Set aside
- Heat 1 tablespoon of oil in the same pan and add diced onion; cook for 4-5 minutes until soft and brown
- Add in frozen vegetables and stir for 4-5 minutes
- Add SPAM, Diva Rice soy sauce and salt and pepper to taste. Stir fry until mixed well
- Top with a sunny-side-up egg
- Garnish with green onions
