Ingredients

  • 3 servings Diva Rice
  • 4 slices spam
  • 1 egg
  • 1 small onion, diced
  • 1/4 cup frozen mixed vegetables
  • 2 scallion or green onions, chopped
  • 2 tbsp soy sauce
  • Optional: Garlic, sesame oil

Instructions

  1. Prepare Diva Rice with hot water
  2. Cut SPAM into 0.5-inch cubes and cook in a pan for 8-10 minutes in medium heat, until crisp. Set aside
  3. Heat 1 tablespoon of oil in the same pan and add diced onion; cook for 4-5 minutes until soft and brown
  4. Add in frozen vegetables and stir for 4-5 minutes
  5. Add SPAM, Diva Rice soy sauce and salt and pepper to taste. Stir fry until mixed well
  6. Top with a sunny-side-up egg
  7. Garnish with green onions
