Diva Rice Sushi Rolls

Ingredients

  • 2 cups Diva Rice
  • Nori sheets
  • 1 cucumber, sliced into long, thin 2-inch strips (optional to add avocado too)
  • 1 tsp Mirin or vinegar
  • 1 cup Smoked salmon or canned tuna, minced
  • 1/2 cup Mayonnaise
  • Salt & pepper to taste
  • Paprika & sesame seeds (optional)
  • Bamboo mat for rolling

Instructions

  1. Prepare Diva Rice with hot water and let cool for 10-15 minutes. For best results: refrigerate for 12 hours to really bring the stickiness out. Add 1 tsp of Mirin or vinegar
  2. Mix minced smoked salmon or tuna with mayonnaise, paprika salt and pepper
  3. Place nori sheet on bamboo mat (shiny side down)
  4. Using your hands, mix Diva Rice with 1 tbsp rice wine vinegar (white wine vinegar or white vinegar are fine too)
  5. Spread a thin, even layer of rice, leaving a 1-inch strip bare at the top edge
  6. Arrange fillings in a horizontal line:
    • Start with tuna/salmon mix
    • Add cucumber strips
    • Place avocado strips (optional)
  7. Using the mat, roll tightly from the bottom
  8. Wet the bare nori edge with water to seal
  9. Let rest for 2-3 minutes
  10. Slice roll into 6-8 pieces using a very sharp, wet knife
  11. Serve with soy sauce and wasabi
